Recipe Wednesday: Do you want some meat with your loaf?

I am not a big meatloaf fan, (the whole name and bread shaped meat thing) but my husband is. Here is a great recipe that we both love. I made it last week.. with a few changes... and it was delicious. Sorry, no photo this week, I didn't want to post a picture of something that looks like dog food on a plate.... but it is really good... even from a non-meatloaf lover.

Nicole's Version of Rempel Family Meatloaf (originally from AllRecipes.com)

INGREDIENTS

1 1/2 pounds lean ground beef (or ground turkey)
1/2 cup crushed buttery round crackers
3/4 cup shredded Cheddar cheese
1 (1 ounce) package dry onion soup mix
2 eggs, beaten
1/4 cup ketchup
2 tablespoons steak sauce

Sauce Topping: (if you don't like alot of sauce, you can scale this down)
1 cup ketchup
1 cup brown sugar
1 tablespoon yellow mustard

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Stir the ground beef, crushed crackers, Cheddar cheese, and onion soup mix in a large bowl until well combined. Whisk the eggs, ketchup, and steak sauce in a separate bowl until smooth. Mix the eggs into the meat until evenly combined, if the mixture seems too dry, add a little water. Press into a 9x5 inch loaf pan.
To make sauce... Mix ketchup, brown sugar and mustard. Pour sauce on top of meatloaf.
Cover with Foil, Bake in preheated oven until the meatloaf reaches 160 degrees F (71 degrees C) and is no longer pink in the center, 45 to 60 minutes. (Uncover for the last 10-15 min.)
