I was talking to my hair stylist the other day and she was telling me how hard of time she was having making "real" food for her one year old.
We can all fall into a rut with the recipes we make for our kids and family. (My rut is usually Mac & Cheese or Chicken Nuggets).
This one has been a favorite in my house lately, so I wanted to share it with you. It is so easy and I always have the ingredients on hand.
I really hope Kate will enjoy cooking (like I do) when she grows up. She loves to help and this is a perfect recipe to get her involved.
Italian Grilled Cheese
Makes 1 Sandwich
Ingredients:
1 Whole Wheat Tortilla (you can use a regular tortilla or bread)
2 Slices Mozzarella Cheese
1/4 cup Grated Parmesan Cheese
1/4 cup Shredded Mozzarella Cheese
Spray Butter
Place 2 slices of mozzarella cheese on one half of tortilla.
Dear OCD moms: The cheese does not have to be perfectly placed and let your child steal a piece of cheese to eat... it will be ok. (I struggle with this.)
Sprinkle parmesan cheese over mozzarella cheese.
If it is not coming out fast enough for you... just flip it upside down.
Sprinkle shredded mozzarella cheese over parmesan.
Fold tortilla in half. (Kate may or may not have put a handful of shredded cheese in her mouth.)
Spray butter on each side of tortilla. Cook on medium high heat for 3-5 minutes, until cheese has melted. Flip half way through cooking time.

2. Sprinkle parmesan cheese over mozzarella cheese.
3. Sprinkle shredded mozzarella cheese over parmesan.
4. Fold tortilla in half.
5. Spray butter on each side of tortilla.
6. Place tortilla in pan and cook on medium high heat for 3-5 minutes, until cheese has melted. Flip half way through cooking time.
